Flavour: Toma Blu is a blue cheese and is categorized ‘erborinato’due to the ‘parsley-green’ colour of the mould. Latteria di Cameri (it’s producer), is a small dairy producing gorgonzola. The cheeses are seasoned traditionally on wooden planks and then placed in barrels where they are garnished with aromatic herbs and spices. This is a robust blue with strong surface influences. The acidity is high and the flavour is long on the palate.
